In the spring season,
seeds flaunt their vitality and energy by sprouting. Sprouts of all
varieties contain the building blocks of life in the form of vitamins,
enzymes and amino acids. In their early growth state, sprouts are very
easy to digest, allowing our bodies to access many wonderful nutrients.
Recent research by the American Cancer Society has backed what nutrition
has known for yearsthat sprouts contain anti-cancer properties, high
levels of active antioxidants, concentrated amounts of phytochemicals and
significant amounts of vitamins A, C and D. In their raw form,
sprouts have a cooling effect on the body, and therefore are best consumed
in warm weather. Those who tend to feel cool can try steaming spouts or
adding them to warm dishes such as stir fries and soups. This reduces
their cooling effect. There is a wide variety of edible and delicious
sprouts, each with a different texture and flavor: alfalfa, mung bean,
lentil, radish, clover, sunflower, broccoli, garbanzo and
adzuki. Here are some great
ways to serve up sprouts: add to salads; combine with other vegetables in
wraps, roll-ups or stir-fries; use as garnish on top of soups, stews,
omelets or scrambled eggs; add to rice or whole grain dishes; use in
sandwiches instead of lettuce. | ||
I am pregnant and
my doctor told me that I have to get enough calcium. I already drink a
glass of milk every day, but should I be drinking
more? Milk does have a lot
of calcium. Unfortunately, most of it passes right through your system
without stopping to build strong bones along the way. That is because milk
is pasteurized and homogenized. Pasteurization is when milk is heated to
very high temperatures to kill bacteria, however this also kills all the
vital enzymes that allow the milks calcium to be available to your body.
Homogenizing is done to prevent separation of the fat and to give milk a
creamy appearance. Under pressure of 2500 pounds per square inch and a
speed of 600 feet per second, milk is passed through pipes and fine
filters which breaks up and denatures the fat particles that are also
essential for calcium absorption. Furthermore, research done by Kurt A.
Oster, MD shows that homogenized milk can actually lead to cardiovascular
disease due to the decrease of plasmalogen in the heart and arterial walls
caused by oxidation of the xanthine oxidase (XO) enzyme from the
homogenizing process. When homogenized milk was fed to cats, Oster noted
profound and rapid vascular degeneration in all species tested. No one has
yet refuted those conclusions. There are many other,
more viable sources of calcium available. If you like milk, you can switch
to almond of rice milk. Soy milk is up for debate and I would not
recommend that for everyone because the estrogenic qualities of soy affect
people in different ways. This needs to be tested individually to learn if
soy is right for you. Nuts, fruits and vegetables contain significant
amounts of calcium as well. Almonds, cooked broccoli and kale in
particular, are very rich in calcium which is much more readily
absorbed.
